Chef Dan’s culinary journey began when, as a young boy, he left the fate of his future to chance by flipping a coin to decide between becoming a Chef or an Architect. The coin landed on Chef, igniting a lifelong passion for the culinary arts.
Following the completion of his apprenticeship, Dan embarked on a culinary adventure, honing his skills in various kitchens across his hometown of Brisbane and exploring remote corners of Australia. His wanderlust led him to London, where he immersed himself in the diverse flavors of Europe, drawing inspiration from street vendors to haute cuisine.
Upon his return to Australia, Dan set his sights on realizing his dream of owning a restaurant, driven by a desire for creative freedom in the kitchen. Years of dreaming, planning, and globetrotting ensued, during which Dan’s encounter with a quaint pasta-making haven in Milan fueled his inspiration.
Experimenting with pasta-making became Dan’s passion project, yielding remarkable dishes that delighted his family and friends. When the opportunity to open his own establishment finally presented itself, Dan knew he wanted to showcase fresh, handmade pasta crafted from premium ingredients.
Thus, Ombra Italian emerged as the culmination of Dan’s culinary odyssey—a haven where his love for pasta and dedication to quality ingredients could be savored by all.
Ombra means ‘Shadow’ in Italian – the name of Dan’s late Keeshond, may he rest in peace. Ombra Italian = Shadow’s Italian
